What is pass in cooking?
A pass is a dish that is ready to be served to a customer. In a professional kitchen, the pass is usually located near the stove or hot plate, so that the chef can easily put the finishing touches on a dish and send it out to the dining room.
The pass is also used as a communication tool between the kitchen and the dining room. When a cook calls out a “pass,” the servers know that a dish is ready for them to pick up and take to the table.
In some kitchens, the pass is also used as a staging area for food that is still in the process of being prepared. This helps to keep the kitchen organized and allows the cooks to work more efficiently.
