## Girello Roast Recipe

Ingredients:
* 1 girello roast (about 2-3 pounds)
* 1 tablespoon olive oil
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1/4 cup red wine
* 1/4 cup chicken broth
* 1 tablespoon Worcestershire sauce
* 1 tablespoon dried Italian seasoning
* 2 cloves garlic, minced
* 1 onion, chopped
* 2 carrots, chopped
* 2 stalks celery, chopped
Instructions:

1. Preheat oven to 375 degrees.
2. In a large skillet, heat olive oil over medium heat.
3. Season girello roast with salt and pepper.
4. Sear girello roast in skillet until browned on all sides.
5. Transfer girello roast to a roasting pan.
6. Add red wine, chicken broth, Worcestershire sauce, Italian seasoning, garlic, onion, carrots, and celery to roasting pan.
7. Cover roasting pan and roast girello roast in preheated oven for 1-1/2 to 2 hours, or until meat is cooked through.
8. Let girello roast rest for 10 minutes before slicing and serving.
