How to Keep My Sourdough Starter Going
If you are a sourdough enthusiast, consider maintaining your own sourdough starter so you can have fresh-baked sourdough loaves any time you want. Wild yeast provides the leavening for sourdough bread; starter is simply a mixture of flour and water in which the yeast can grow. You can obtain some mature sourdough starter from another baker, purchase and reconstitute dried starter or mix your own starter. Once you have a mature starter, it will require minimal attention to keep the wild yeast cultures alive.

- Glass or ceramic container with lid
- Flour
- Water
- Wood or plastic spoon

Store the starter in a container with a lid. Keep it refrigerated unless you plan to use it daily.

Remove the starter from the refrigerator and feed it before using it. Add equal parts water and flour to approximately double the volume of the starter; for example, stir 1/2 cup water and 1/2 cup flour into 1 cup of starter. Let the starter sit at room temperature for at least 4 hours before using it.

Feed the starter again after using it and return it to the refrigerator. If you want to keep the volume of the starter constant, remove half of the starter before the next feeding.

Freeze the starter if you will not use it for over a month. Thaw the starter, then feed it and let it sit at room temperature for 24 hours before using it.
