How to Harden Royal Icing (7 Steps)
No edible decorating medium is better suited for creating fine, detailed embellishments than royal icing. It has a thin consistency, so it is easy to pipe in narrow lines and dots. It hardens when exposed to air, creating a rigid embellishment that will not lose its shape. You can recreate patterns with extraordinary detail by piping the image onto parchment paper. Once you allow the royal icing to harden, you can transfer the stiff piece of frosting to a cake and secure it in fresh icing.
Things You'll Need
- Royal icing
- Piping bag
- Decorative piping tip
- Cake
- Parchment paper
- Baking sheet
Instructions

Line a baking sheet with parchment paper.

Place a paper illustration or template under the parchment paper to follow as a piping guide, if desired.

Put a decorative piping tip on the piping bag. Use a tip with the smallest round opening available.

Fill the bag with royal icing. Twist the bag just above the icing to keep it from squeezing out of the top when you pipe the design.

Pipe the design onto parchment paper.

Leave the baking sheet exposed to air at least overnight, or up to three days, to harden the icing.

Lift the hardened icing embellishments from the parchment paper. Apply them to a decorated confection.
