How to Enrich Skimmed Milk for Baking

When it comes to baked goods, milk serves a number of purposes. It adds flavor and moisture to the product, which makes the food softer on the palate. You may choose skim milk over other dairy options, such as whole milk or 2 percent milk, to lower your fat intake. Using skim milk, however, can backfire when you bake sweet treats, breads or other baked goods. The foods can be too dry, crumbly or lacking in flavor. For tastier baked goods made with skim milk, enrich the milk with other products, many of which can be found in your refrigerator or pantry.

Things You'll Need

  • Skim milk
  • Non-fat dry milk
  • Heavy cream, whipping cream, or half and half
  • Evaporated milk
  • Butter

Instructions

  1. For every 1 cup of skim milk that you plan to use for baking, add two teaspoons of non-fat dry milk to the skim milk. This will only slightly increase the fat content of the skim milk and significantly add to the flavor. Use the enriched skim milk as you would whole milk in any recipe.

  2. To increase both the fat content and flavor of skim milk, add cream or other kinds of milk. Start with 1 cup of skim milk. If you are using half and half, remove 2 teaspoons of skim milk from the cup and replace it with 2 teaspoons of half and half. If using cream -- either heavy or whipping -- remove 1 teaspoon of skim milk and replace it with 1 teaspoon of cream. Use the enriched skim milk as you would any milk product for a recipe.

  3. Remove 1 tablespoon of skim milk from the cup and replace it with the same amount of evaporated whole milk. Use the milk as directed by the recipe.

  4. Add butter to increase the flavor and improve the texture of baked goods made with skim milk. Remove 1 tablespoon of skim milk from the recipe and replace it with 1 tablespoon of melted butter. Add the enriched milk to the recipe as directed.
