How do i make homemade ketchup?
Ingredients:
- 3 lbs. ripe tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup packed light brown sugar
- 1/2 cup white vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground cinnamon
Instructions:
1. Wash the tomatoes and remove the stems. Cut the tomatoes into wedges.
2. In a large saucepan or Dutch oven, combine the tomatoes, onion, garlic, brown sugar, vinegar, Worcestershire sauce, salt, black pepper, cloves, and cinnamon.
3. Bring the mixture to a boil over medium heat, stirring occasionally. Reduce the heat to low and simmer for 1 hour, or until the tomatoes are very soft and the mixture has thickened.
4. Remove the saucepan from the heat and let cool for a few minutes. Puree the mixture in a blender or food processor until smooth.
5. Return the puree to the saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer for 30 minutes, or until the ketchup has thickened to the desired consistency.
6. Remove the saucepan from the heat and let cool completely. Store the ketchup in an airtight container in the refrigerator.
Tips:
- For a smoother ketchup, strain the puree before returning it to the saucepan.
- You can also use a ricer or food mill to puree the tomatoes.
- If you don't have a blender or food processor, you can also mash the tomatoes with a potato masher.
- Add more or less sugar, vinegar, or spices to taste.
- You can also add other ingredients to your ketchup, such as diced onions, celery, peppers, or herbs.
