What elements does baking powder contain?
Baking powder typically contains three ingredients:
- A base, such as baking soda or sodium bicarbonate
- An acid, such as cream of tartar or monocalcium phosphate
- A drying agent, such as cornstarch
When moisture mixes with baking powder, the acid and base neutralize each other and release carbon dioxide gas. This gas causes baked goods to rise.
The drying agent helps to keep the baking powder from clumping.
Some baking powders also contain other ingredients, such as stabilizers or leavening agents.
