Can use bicarbonate of soda and baking together?

It's not recommended to use baking soda and baking powder together in the same recipe. Here's why:

* They both act as leavening agents: Both ingredients create air bubbles in batter, making it rise.

* They work in different ways:

* Baking soda requires an acidic ingredient (like buttermilk, lemon juice, or vinegar) to activate and release carbon dioxide.

* Baking powder contains both an acid and a base, so it requires only liquid to activate.

* Redundant and potentially counterproductive: Using both together can lead to excessive leavening, resulting in a dense and rubbery texture. It can also lead to a bitter taste.

Exceptions:

* Specific recipes: There are rare instances where a recipe might call for both baking soda and baking powder, but this is usually done for a specific reason (like boosting leavening or balancing flavors).

* Small amounts: You might get away with using a tiny amount of baking soda alongside baking powder (perhaps 1/4 teaspoon).

In general, it's best to stick with one leavening agent at a time unless the recipe explicitly calls for both.
