What does a fresh egg look like?
A fresh egg, depending on the breed of hen, has a shell color that can range from white to brown. Here's what you can expect:
Shell:
* Color: White, brown, blue, green, or speckled.
* Texture: Smooth and slightly rough.
* Appearance: No cracks, chips, or discoloration.
Yolk:
* Color: Deep yellow to orange, with a defined shape.
* Texture: Firm and slightly rounded, not spread out.
White (Albumen):
* Color: Clear, with a slight bluish tint.
* Texture: Thick and viscous, forming a clear ring around the yolk.
Other Characteristics:
* Air Cell: A small air pocket at the wider end of the egg is normal. It should be small and barely noticeable.
* Smell: Fresh eggs have a faint, earthy odor. They shouldn't smell foul or rotten.
How to tell if an egg is fresh:
* Float Test: Fresh eggs sink to the bottom of a bowl of water. Older eggs will float, indicating air has seeped into the air cell.
* Candling: Hold a bright light behind the egg to see the yolk and air cell. A fresh egg will have a small air cell and a defined, round yolk.
Remember, the freshest eggs are those that have been recently laid. If you're unsure, it's best to err on the side of caution and use the freshest eggs possible.
