Fried Eggs

1. Heat the cast iron skillet over medium heat until a drop of water sizzles when dropped in the pan.

2. Add 1 tbsp. of butter or oil to the pan and swirl it around to coat the surface.

3. Break the eggs into the skillet one by one. Allow the eggs to cook until they reach the desired doneness. Use the spatula to flip the eggs over, again one by one, for over-easy or over-hard fried eggs.

Scrambled Eggs

1. Break the desired number of eggs into a bowl.

2. Scramble the eggs using a whisk or fork. A small amount, 1/4 cup or less, of milk, cream or vanilla extract can be added to the eggs if desired.

3. Heat the cast iron skillet over medium heat until hot. Add 1 tbsp. of butter or oil and swirl to coat.

4. Pour in the scrambled eggs. Allow the eggs to begin to set in the pan, and then use the spatula to move the uncooked portion to the bottom of the pan. Using a simple scraping motion through the eggs will accomplish this.

5. Cook the eggs until both yellow and whites are cooked through.
