In the past, eggnog was made with raw eggs, but due to the risk of Salmonella contamination, the FDA (Food and Drug Administration) requires that all eggnog sold in the US be pasteurized. Pasteurization is a process that heats the eggnog to a temperature that kills harmful bacteria, including Salmonella.
