Option 1
Replace malt sugar with 1 to 2 tablespoons extra of honey as a replacement. Or use agave for the same sweetening effect
Option 2
Replace the malt with an equal amount of molasses and an equal amount of wheat gluten. The molasses will add sweetness (like the barley malt syrup), and the wheat gluten will have some similar effects on texture that the starch in the unfermented barley malt flour can contribute; however, these replacements cannot provide all of the complex flavors contributed by real malted barley in a bread-type recipe.
