How to Bake With a Thermometer (4 Steps)
Bread and cake recipes typically give suggested cooking times or color cues to indicate when the item is done. But ovens vary so greatly that these suggestions may be flawed. Two types of thermometers -- an oven thermometer and an instant-read digital baking thermometer -- can increase your baking success. Oven thermometers read the actual temperature inside the oven, so you can adjust it if your oven heats too cool or too hot. Digital baking thermometers read the inside temperature of breads and cakes to determine doneness, just as you might read the internal temperature while roasting meat.

Hang an oven thermometer from the front of an oven rack so you can easily see it through the oven door. Heat the oven to the recommended temperature, then look at the thermometer to see whether the temperature in the oven matches the set temperature. For example, if you set the oven to 400 degrees Fahrenheit but the thermometer reads 350 F, turn up the oven temperature to achieve the actual temperature you want.

Bake the bread or cakes in the oven when you have achieved an accurate temperature. Use the minimum time guideline in the recipe.

Insert an instant-read digital meat and baking thermometer into the product after the minimum cooking time. Place it at an angle along the sides so you don't make unattractive holes in the top crust, but make sure it reaches the center without touching the pan. Breads enriched with sugar, milk or eggs should be baked to 185 F to 190 F. Other breads should reach 200 F to 210 F, depending on your preference for a soft or hard crust. Cakes should reach an internal temperature of about 210 F.

Return the pan to the oven if it's not to the proper temperature and bake for a few minutes more. Check the item after about five minutes if the temperature needs to rise about 10 degrees, or bake for less time if the temperature difference is less than 10 F.
