Can you make empanadas in the toaster oven?
Ingredients:
- Empanada Dough (store-bought or homemade)
- 1 pound ground beef or chicken, cooked
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup shredded cheese
- 1 tablespoon tomato sauce
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 egg, beaten
- Flour for dusting
Instructions:
- Preheat the toaster oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large skillet, brown the ground beef or chicken over medium heat. Drain any excess fat.
- Add the chopped onion, bell pepper, cheese, tomato sauce, chili powder, cumin, salt and pepper to the skillet and stir to combine. Cook until the vegetables are softened and the cheese is melted.
- Remove the skillet from the heat and let the mixture cool slightly.
- On a lightly floured surface, roll out the empanada dough into 8-inch (20 cm) circles.
- Place 2 tablespoons of the filling on each circle of dough.
- Fold the dough over and pinch the edges together to seal the empanada.
- Brush the beaten egg onto the empanadas.
- Place the empanadas on a lightly greased baking sheet.
- Bake in the toaster oven for 15-20 minutes, until the empanadas are golden brown.
- Let the empanadas cool for a few minutes before serving.
