Easy Creamy Pumpkin Soup
This recipe is simple, uses pantry staples, and yields a delicious, comforting soup.
Ingredients:
* 1 tablespoon olive oil
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 teaspoon ground ginger
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1 (15 ounce) can pumpkin puree
* 4 cups vegetable broth
* Salt and pepper to taste
* Optional: 1/2 cup heavy cream or coconut milk
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add onion and cook until softened, about 5 minutes.
3. Stir in garlic, ginger, cinnamon, and nutmeg. Cook for 1 minute, stirring constantly.
