Things You'll Need

  • 3 lbs. fresh tomatoes
  • 1 cup chicken broth
  • Stockpot
  • Strainer
  • Large bowl
  • 2 tbsp. fresh basil
  • 1 tbsp. onion powder

Instructions

  1. Combine 3 lbs. fresh tomatoes and 1 cup chicken broth in a stockpot over medium heat. Boil for 45 minutes, stirring occasionally.

  2. Pour the tomato and broth mixture through a strainer and into a large bowl to remove the skins and seeds. Press chunks of tomato meat through the strainer if they are not completely broken down.

  3. Pour the tomato and broth mixture back into the stockpot. Add 2 tbsp. fresh basil and 1 tbsp. onion powder and continue boiling for an additional 15 minutes. Stir frequently.

  4. Allow the tomato soup to cool for five minutes before serving.
