Oxalic acid can be toxic if consumed in large quantities and can cause symptoms such as nausea, vomiting, and diarrhea. Additionally, ornamental rhubarb leaves contain a higher concentration of oxalic acid compared to edible rhubarb. Therefore, it is not recommended to eat the stems of ornamental rhubarb and they should be considered poisonous.
