How do you pickle food?
Step 1: Preparing the Food
1. Choose fresh, firm produce. Vegetables, fruits, and even some proteins, like eggs and fish, can be pickled.
2. Prepare your food. Cut it into uniform sizes, and remove any parts you don't want, such as stems, seeds, or cores.
Step 2: Making the Pickling Brine
1. Gather your ingredients. Depending on the recipe you're using, you'll need some combination of vinegar, water, salt, sugar, spices, and herbs.
2. Combine the ingredients. Bring them to a boil over medium-high heat, stirring to dissolve the sugar and salt. Remove the brine from heat and let it cool completely.
Step 3: Preserving and Canning the Food
1. Prepare your canning jars. Wash the jars and lids with hot, soapy water, and rinse them thoroughly.
2. Pack the food into the jars. Fill them to within ½ inch of the rim.
3. Add the pickling brine. Pour the cooled brine over the food until the jars are covered by at least ½ inch.
4. Seal the jars. Wipe the rims of the jars clean and seal them with the lids.
5. Process your food. Place the jars in a canner and process them according to the recipe you are using.
Step 4: Storing and Enjoying the Pickled Food
1. Let your food cool. Allow it to rest at room temperature for at least 24 hours before moving to the refrigerator.
2. Wait for the flavors to develop. Give it at least 2 weeks before tasting your pickles.
3. Store the pickles in a cool, dark place. They will last for 6-12 months.
