What is a sauce of white wine and mushrooms?
Sauce au Vin Blanc (White Wine Sauce)
Ingredients:
- 1/4 cup (1/2 stick) unsalted butter
- 1/2 cup chopped shallots
- 1/2 cup chopped mushrooms
- 1/4 cup dry white wine
- 1 cup chicken broth
- 1/4 cup heavy cream
- 1 tablespoon chopped fresh parsley leaves
- Salt and pepper to taste
Instructions:
1. In a medium saucepan, melt the butter over medium heat.
2. Add the shallots and mushrooms and cook until softened, about 5 minutes.
3. Add the white wine and cook until reduced by half, about 5 minutes.
4. Add the chicken broth and bring to a simmer.
5. Reduce heat to low and simmer for 15 minutes, or until sauce has thickened.
6. Stir in the heavy cream and parsley.
7. Season with salt and pepper to taste.
8. Serve immediately.
