How much potato salad to feed 90 people?

Ingredients

* 20 pounds potatoes (~40 medium potatoes)

* 1 cup mayonnaise

* 1 cup sour cream

* 1/2 cup chopped celery

* 1/2 cup chopped onion

* 1/2 cup chopped hard-boiled eggs

* 1/4 cup chopped fresh parsley

* 1 teaspoon salt

* 1/2 teaspoon black pepper

Instructions

1. Scrub the potatoes and cut them into 1-inch cubes.

2. Place the potatoes in a large pot and cover them with water. Bring to a boil over medium heat, then reduce heat to medium-low and simmer until the potatoes are tender, about 15 minutes.

3. Drain the potatoes and let them cool slightly.

4. In a large bowl, combine the potatoes, mayonnaise, sour cream, celery, onion, eggs, parsley, salt, and pepper. Stir until combined.

5. Serve immediately or refrigerate for later.

Tips

* To make sure the potatoes are cooked evenly, use a variety of sizes of potatoes and cut them into equal-sized cubes.

* If you don't have time to cook the potatoes, you can use frozen potatoes instead. Just be sure to thaw them completely before using.

* If you're serving the potato salad at a picnic or potluck, make sure to keep it cool. You can either place it in a cooler with ice or put it in the refrigerator.

* Potato salad is a great dish to make ahead of time. It can be stored in the refrigerator for up to 3 days.
