What is Polk salad?
Polk salad refers to dishes using leaves of the pokeweed (Phytolacca americana), a common North American herbaceous perennial plant in the pokeweed family (Phytolaccaceae). Some pokeweed preparations (especially young shoots and fresh berries) are considered toxic if not properly prepared with proper cooking. Poke salad is commonly associated with cuisine of the Southern United States.
