Ingredients:
- 1 package (3 ounces) orange gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 (20 ounce) can crushed pineapple, undrained
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 (8 ounce) container of Cool Whip, thawed
Instructions:
- Dissolve gelatin in boiling water. Stir in cold water. Add crushed pineapple and stir. Refrigerate until slightly thickened, about 1 hour.
In a medium bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Fold in Cool Whip.
Gently fold cream cheese mixture into gelatin mixture. Pour into a 9x13-inch dish. Refrigerate until firm, at least 4 hours.
Tips:
- For a smoother texture, strain the crushed pineapple before adding it to the gelatin mixture.
- If you don't have time to refrigerate the gelatin mixture for 1 hour, you can place it in the freezer for 15-20 minutes.
