What is white confection?
White confection or simply confection is sugar paste, also called fondant or sugarpaste. It is an edible icing for cakes, cookies and other pastries, formed from sugar, water and corn syrup heated to 240 °C (464 °F) and kneaded until it becomes a smooth paste. In baking, confection is best known as the icing used on petit fours.
