What causes blue cheese?

The blue-grey veins of blue cheese are formed when spores of the mold Penicillium roqueforti are injected into curds of cow, goat, or sheep milk. The enzymes from the mold grow throughout the cheese and cause the milk fats to break down into chemicals that make the cheese turn blue and add a sharp, salty taste.
