Why does some cheese have holes?
Some cheese has holes because of a bacteria called Propionibacterium freudenreichii. Propionibacterium produces tiny bubbles of gas during cheese ripening, giving cheese its distinctive holes or "eyes." This type of bacterial culture commonly is used with hard Swiss (Emmental) cheeses with larger holes or the smaller but numerous eyes in French Comté or American Colby as well as many more.
