How to Make Homemade Broccoli-Cheddar Cheese Soup
Broccoli-cheddar cheese soup is a staple at many restaurants because it is such a tasty comfort food. Luckily it isn't difficult to make at home. This recipe uses real cheddar cheese and simple ingredients that you may already have in your kitchen. You can even add additional broccoli and carrots to give your kids an extra veggie kick.
Things You'll Need
- 1/2 cup butter
- 1 large onion, minced
- 1/2 cup flour
- 3 cups chicken broth
- 3 cups milk
- 2 tsp. sage
- 2 cups grated sharp cheddar cheese
- 1 head or 4 cups broccoli, cut into bite-size pieces
- 2 carrots, cleaned and diced (optional)
Instructions

Bring a large pot of water to boil. Add the broccoli and carrots to the boiling water and boil for two to three minutes. Drain the broccoli and carrots and set aside.

In a large stock pot, saute the butter and onion over medium heat until transparent. Stir in the flour and cook until the mixture begins to bubble, stirring constantly.

Stir in the chicken broth and milk and allow the mixture to cook over medium heat until it begins to thicken.

Add the sage; whisk until the sage is blended into the soup base.

Add the shredded cheddar cheese and cooked broccoli and carrots and stir until blended.

Allow the soup to simmer about 20 minutes or until the broccoli is tender.
