How to Make Oyster Kilpatrick

  1. Preheat the oven to 400 degrees F, then line a baking pan with aluminum foil.

  2. Pour some rock salt in the baking pan to help the oyster shells to stay level.

  3. Fry the bacon on medium heat until done, but not crispy. Sit 2 paper towels on a plate, then place cooked bacon on the towels to dry.

  4. Peel the onion, then chop into tiny pieces. Tear or cut cooled bacon into small pieces. Add the onion and bacon in a bowl and mix lightly with your fingers.

  5. Rinse the oysters in cold water, then dry them with paper towels. Open the oysters and sit the shell halves with the meat in them in the baking pan.

  6. Put the butter, ketchup and Worcestershire sauce in a small saucepan to make the Kilpatrick sauce. Heat on medium heat until hot, stirring so the sauce doesn't stick to the pan. Take off the burner and sit aside.

  7. Distribute the bacon and onion evenly to each oyster. Pour as little or as much of the Kilpatrick sauce as you want over the top of each oyster.

  8. Bake in the oven for 5 minutes and remove. Serve hot. Slice the 2 lemons into wedges and place on each plate.
