What is the recipe for La Madeleine French Bakery and Cafe chicken salad sandwich?

Ingredients:

For the chicken salad:

- 3 cups (about 1 pound) of cooked, shredded chicken- I like rotisserie chicken for this.

- 1 cup of chopped celery

- 1/2 cup of chopped red onion

- 1/2 cup of chopped almonds

- 1/4 cup of mayonnaise

- 2 tablespoons of Dijon mustard

- 2 tablespoons of finely chopped fresh tarragon

- Salt and pepper to taste

For the sandwiches:

- 6 slices of your favorite bread, toasted- sourdough is a great option

- 3-4 Tablespoons butter, softened

Instructions:

- In a large bowl, combine the shredded chicken, celery, red onion, almonds, mayonnaise, Dijon mustard, tarragon, salt, and pepper. Mix until combined.

- Spread the softened butter onto one side of each slice of bread.

- Top 3 slices of bread with a generous portion of the chicken salad, then top with the remaining 3 slices of bread, buttered side up.

- Cut the sandwiches in half and enjoy!
