What is a simple shrimp fried rice recipe?

### Ingredients

* 1 pound large shrimp, peeled and deveined

* 1 tablespoon vegetable oil

* 1/4 cup chopped onion

* 1/4 cup chopped green bell pepper

* 1/4 cup chopped red bell pepper

* 2 cloves garlic, minced

* 1 tablespoon grated ginger

* 2 cups cooked rice, cooled

* 1/2 cup frozen peas and carrots, thawed

* 2 eggs, beaten

* 2 tablespoons soy sauce

* 1 teaspoon sesame oil

* 1/4 teaspoon salt

* 1/4 teaspoon black pepper

* Green onions, for garnish

Instructions

1. Heat the oil in a large skillet over medium heat.

2. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

3. Add the onion, green bell pepper, and red bell pepper to the skillet and cook until softened, about 5 minutes.

4. Add the garlic and ginger and cook for 1 minute more, or until fragrant.

5. Add the rice and frozen peas and carrots to the skillet and stir to combine. Cook for 5 minutes, or until the rice is heated through.
