What Type of Fish Can You Cook in Puff Pastry?
You’d be surprised by the variety of fish you can cook in puff pastry to make tasty and easy dishes. If you use fresh fish, start out by using boneless, skinless fish. If you order fish from the counter at the grocery store, ask to have it de-boned there to save the headache of doing it yourself.
Saltwater Fish

Saltwater fish, such as salmon or snapper, pairs well with puff pastry. Top your fish with butter, basil and parsley. Then wrap each piece in dough and pop it in the oven. You can also make fish puffs by coating the fish with lime juice and teriyaki sauce. Cut your pastry dough into long 1-inch wide strips. Then divide the fish into chunks and wrap in dough strips. Bake until golden brown and serve on wooden skewers.
Freshwater Fish

Use freshwater fish, such as trout or catfish, with puff pastry to make a delicious pie or wrapped fish. To make the pie, cook and puree onions and reduce half-and-half on the stove. Then add onion puree to the half-and-half with salt and pepper to make a sauce. Drizzle sauce over fish with a touch of white truffle oil and then wrap in puff pastry and bake. Or make a simpler fish dish by wrapping the fish in puff pastry with salt, lemon pepper and Old Bay seasoning. Serve with a tomato and caper mix on top.
Shellfish

Puff pastry and shellfish -- such as lobster, shrimp or scallops -- combine to make delectable small bites or hearty main courses. Be sure to properly clean and remove the shells and veins from your shellfish. Wrap chunks of shellfish in puff pastry with garlic and herb cheese spread and bacon crumble. Then put on wooden skewers for a tasty appetizer. Or make a seafood pie by shaping pie boats out of the puff pastry and filling with cooked shellfish, veggies, white wine and milk.
Packed Seafood

If you have high-quality packed or canned seafood, such as tuna, you can whip up some quick dishes with puff pastry. Make fish empanadas by adding cooked garlic, tomatoes and onions to the fish and wrapping it in puff pastry. You can also add hard-boiled egg or green olives, depending on your preferences. If you’re in the mood for some serious comfort food, make a tuna melt. Just mix together tuna, mayonnaise, cheese and pepper. Then wrap in puff pastry and bake until golden brown.
