How to Cook Delicata Squash Cut in Half

Also referred to as peanut squash or bohemian squash, delicata squash has a mild, moderately sweet flavor, slightly reminiscent of sweet potatoes. The flesh is creamy and smooth when properly cooked. Unlike most squash varieties with edible but tough skin, delicata has a thin, tender skin that is both edible and palatable. Squash is rich in nutrients including iron and vitamins A and C. Cut small, tender delicata squashes in half for ideal serving portions. You will find that roasting the halves is easy, delicious and virtually fool proof.

  • Paper towels
  • Cutting board
  • Sharp knife
  • Spoon
  • Melted butter or olive oil
  • Seasonings (optional)
  • Shallow-rimmed baking dish or sheet
  • Fork

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Wash the squash under cold, running water. Dry with paper towels and set on a cutting board.

  2. Cut the squash lengthwise with a sharp knife, holding it firmly with one hand to prevent it from slipping. Carve out the stem area from both halves.

  3. Remove the seeds and surrounding pulp. Use a spoon to scrape the squash clean of any remaining pulp.

  4. Rub the entire surface area of the squash halves with melted butter or olive oil. Sprinkle seasonings on both sides of the squash halves, if desired. Place the squash in a single layer on a shallow-rimmed baking dish or sheet with either side facing up.

  5. Bake the squash until the flesh is tender all the way through. Test by piercing with a fork. Keep in mind that delicata squash can vary in size, so baking might take anywhere from 30 minutes to one hour.

  6. Remove the squash from the oven. Peel off the skin, if desired, but remember that delicata skin is very tender and is usually left intact when serving.
