How to Make Healthy, flavorful, low calorie, low fat mashed potatoes

In this day and age, everyone is cooking healthier and eating better, but that does not mean you have to sacrifice flavor or what you love, like Mashed Potatoes.

Things You'll Need

  • Red Potatoes
  • I can't believe it's not butter spray.
  • 1 onion (any kind you like)
  • 1 teaspoon minced garlic
  • 1/2 cup 1% milk
  • salt, pepper, cayenne pepper, parsley flakes

Instructions

  1. Depending on the size of potatoes, determine if they should be left whole, or cut in half but do not peel. Put the potatoes in a pot of water and place on stove to boil.

  2. In a small pan, add about 3 tablespoons of "I can't believe it's not butter" Spray. It's calorie and fat free, and tastes just like the real thing! Next, add 1 teaspoon minced garlic and 1 onion and sauté over medium heat. Add a pinch each of salt, pepper, cayenne pepper, and parsley flakes. When the onions are tender, turn off stove and set aside.

  3. Once the potatoes are done, turn off the stove, drain the water and return to stove top. Next, with a potatoe masher or fork, gently mash the potatoes, but leave a little chunky.

  4. Add 2 teaspoons of the butter spray, 1/2 cup of warm 1% milk by slowly drizzling it into the potatoes and slowly stirring with fork.

  5. Add the sauteed onions and garlic from the pan, 1 teaspoon salt and pepper, a pinch of cayenne and a pinch of parsley flakes. gently stir, and pour onto a serving dish or bowl.

  6. Now serve and enjoy!
