Ingredients:
- 1 cup ripe passionfruit, seeds and pulp
- 1 cup granulated sugar
- 1 cup water
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
Instructions:
1. In a medium saucepan, combine the passionfruit pulp and seeds, sugar, and water. Bring to a boil over medium heat, stirring occasionally.
2. Reduce heat to low and simmer for 15 minutes, or until the sugar has completely dissolved and the mixture has thickened slightly.
3. Remove from heat and let cool for a few minutes.
4. Strain the mixture through a fine mesh sieve into a clean container. Discard the solids.
5. Add the vanilla extract and lemon juice to the syrup and stir to combine.
6. Let the syrup cool completely before using.
