Juicing An Onion
Onions come in several common varieties such as yellow, red and white, and although they make valuable additions to scores of different dishes, not too many people would consider drinking onion juice. The pungency and aftertaste alone are enough to stop many people from pouring a glass and drinking it down. Of course, if you do decide that you'd like to add some onion as part of your juice routine, it makes sense to follow some guidelines that will make it as agreeable as possible.
The Cutting Board

Usually, all you have to do is wash and cut up your vegetables before processing them in your juice extractor, but onions are a little different. The skin makes washing the flesh largely unnecessary, and you may want to use a different cutting board, or at least wash the one you have thoroughly with soap and water after you've cut the onion. Using the same board for all your produce might result in a slight onion taste when you juice fruit at a later date.
Onion Goes First

When you add onion to your juices, you aren't going to juice it alone, so make the effort to add it to the juicer before the other ingredients. If you add the onion at the end, that strong onion taste and smell will be hard to get out and you may be tasting it the next time you run something through the juicer. Following some onion with other vegetables will help to wash all the onion pungency right out.
Complementary Flavors

You can add many different vegetable combinations in with your onion juice to create a drink you'll want to try again in the future. Vegetables like carrots, parsley, cucumber, tomatoes, ginger and red pepper all complement the flavor of onion, especially if you only add a half or quarter of an onion to the juice. Adding a couple of apples to any of the vegetable juices will give them a sweetness that makes many of the stronger flavored vegetables tolerable. You probably don't want to add apple with tomato, but it goes with most vegetables in juice.
Take It Slow

The most effective way to introduce onion juice into your life is to take it slow when you first get started. Add a small slice of onion to a vegetable juice and gradually increase the amount until you are used to it. Spanish onion is a sweet, mild-flavored onion that works well for beginners to the juicing world, and throwing in some apple will sweeten it even more. Juicing onion certainly isn't for everyone, but if you've been wanting to give it a try, a slow introduction works best.
