Instructions

1. Place two shallow plates on your work surface; pour about 1/8 inch of honey onto one and about 1/4 inch of salt onto the other. Blend a pinch of ground cinnamon and a pinch of cayenne pepper into the salt.

2. Dip the rim of each margarita glass in the honey first and then in the spiced salt. Set the rimmed margarita glasses aside.

3. Create a simple syrup by blending a 1-to-1 mixture of water and sugar. Add 1/4 cup of tamarind pulp or paste for every cup of water used. You will need about 3 ounces of simple tamarind syrup for two tamarind margaritas.

4. Blend 1 part orange liqueur with 2 parts orange juice, 3 parts simple tamarind syrup and 4 parts tequila in a cocktail shaker, and then add a splash of lime juice.

5. Fill the remainder of the cocktail shaker with ice, close it and shake it for approximately 1 minute.

6. Pour the tamarind margarita from the cocktail shaker into rimmed margarita glasses. Repeat the margarita blending process as many times as necessary.

7. Garnish each tamarind margarita with a lime wedge and couple leaves of mint. Serve immediately.
