Does potato vodka break down into sugar?

Potato vodka does not break down into sugar. During the distillation process of vodka, ethanol (alcohol) is separated from water and other impurities present in the fermented mash. The result is a high-proof spirit, typically containing around 40% ABV (alcohol by volume), with little to no sugar content.

Unlike certain beverages, such as sweet liquors or cocktails that may contain added sugars, pure vodka, including potato vodka, does not contain any residual sugars. Vodka is generally categorized as a low-carbohydrate and zero-sugar alcoholic beverage.
