Do you need to grease NONSTICK cookie sheets when recipe calls for it?
You generally don't need to grease nonstick cookie sheets when a recipe calls for it. Here's why:
* Nonstick surfaces are designed to prevent food from sticking. Greasing them can actually *reduce* their effectiveness, potentially leading to more sticking.
* Excess grease can affect the texture and browning of your cookies. It can make them greasy or prevent them from browning evenly.
However, there are a few exceptions:
* New nonstick sheets may benefit from a light coating of oil the first few times you use them to help season the surface.
* Recipes that call for very delicate cookies (like macarons) might need a light dusting of flour or powdered sugar on a nonstick sheet to prevent sticking.
In most cases, simply follow the directions in your recipe. If the recipe calls for greasing a nonstick sheet, it's best to err on the side of caution and do so. However, if it doesn't explicitly mention greasing, you're probably safe to skip it.
