Things You'll Need

  • 6 cups granulated sugar
  • 3 cups cold water
  • 2 tbsp. light corn syrup
  • 1/8 tsp. salt
  • 1 oz. peppermint flavoring oil
  • 1 tsp. cream of tartar
  • Candy thermometer
  • Cookie sheet
  • Confectioner’s sugar
  • Rubber mallet
  • Scissors
  • Airtight container
  • Wax paper

Instructions

  1. Combine 6 cups of granulated sugar, 3 cups cold water, 2 tbsp. light corn syrup, and 1/8 tsp. of salt in a large saucepan. Add 1 oz. of peppermint oil to the mixture, and stir until well blended.

  2. Heat the mixture in a saucepan over medium-high heat. Continue to stir the mixture until all the sugar dissolves.

  3. Bring the mixture to a full boil. Use a spoon to keep the crystals off the sides of the pan.

  4. Add the cream of tartar once the mixture boils. Keep heating the mixture until it reaches 300 degrees on a candy thermometer.

  5. Line a cookie sheet with confectioner’s sugar. You will only need a fine dusting.

  6. Pour the liquid mixture onto the cookie sheet. Allow the candy to harden slightly. Use a rubber mallet to break the mints into small pieces, or cut the candy into strips while it is still relatively hot.
