How to Use Granulated Sugar for Frosting (8 Steps)

Most frosting recipes require the use of powdered sugar.However, a creamy fluffy frosting can be made out of granulated sugar by cooking it first to break down the granules. The result is a silky smooth delicious icing that can be spread just as easily as traditional buttercream frosting. This recipe will frost a three-layer cake or 24 to 30 cupcakes easily.

Things You'll Need

  • 4 large eggs
  • 1 cup granulated sugar
  • 2 tsp. pure vanilla extract
  • 1/2 tsp. table salt
  • 1 lb. unsalted butter cut into small pieces
  • Large mixing bowl
  • Whisk
  • Large saucepan (big enough for the bowl to rest in)
  • Thermometer
  • Electric mixer
  • 1/2 tsp. salt

Instructions

  1. Crack the eggs into the mixing bowl and add the sugar and vanilla extract.

  2. Whisk the egg, sugar and vanilla mixture until the eggs and sugar are evenly combined.

  3. Fill the saucepan with about 1/2 inch of water and bring it to a boil on the stove top.

  4. Reduce the heat to low and place the mixing bowl on the saucepan. This forms a double boiler.

  5. Whisk the egg and sugar mixture while it slowly heats up to 160 degrees Fahrenheit.

  6. Remove the mixing bowl from the heat and beat the eggs on medium high with the mixer for approximately five minutes. The egg and sugar mixture will start cooling down, turning fluffy and yellow.

  7. Add the butter one piece at a time to the mixture and whisk for about 30 seconds between each piece.

  8. Add the salt and continue to whisk until the mixture becomes smooth.
