How to Convert Vegetables Into a Powder (5 Steps)

If you enjoy growing fresh vegetables in your garden, you may end up with an excess of produce. One way to preserve and store the vegetables before they decay is to turn them into a dried vegetable powder. You can make vegetable powder using a food dehydrator. Once finished, the vegetable powder can be used to create a base for soups or can be added to vegetable juice to make it more nutritious.

Things You'll Need

  • Cutting board
  • Zucchini
  • Summer squash
  • Carrots
  • Celery
  • Knife
  • Dehydrator
  • Mortar and pestle
  • Plastic freezer bag

Instructions

  1. Wash zucchini, summer squash, carrots and celery. Place the vegetables onto a cutting board. Slice the vegetables into 1/4-inch thick pieces.

  2. Lay the vegetable slices onto the sheets of a food dehydrator. Do not overlap the vegetables; instead, lay them out in a single layer on each dehydrator sheet.

  3. Plug in the food dehydrator and allow it to run for 8 hours. Check to see if the vegetables are all completely dry. If not, run the machine in 1 hour increments until they are all dry.

  4. Place the dried vegetables in a mortar and pestle. Grind the dried vegetables into a powder. You may need to grind the vegetables in batches in order to grind them all.

  5. Pour the powdered vegetables into a plastic freezer bag for storage. You can freeze the powdered vegetables for up to 12 months, or store them in a pantry for up to 6 months.
