How to Steam Artichokes in a Rice Cooker
Rice cookers are a great multi-purpose kitchen tool. They take up little space and can be used to create an entire meal. Rice cookers come with a steamer basket that sits on top of the bowl where the rice is cooking; as your rice cooks, the steam released is trapped in the steamer basket to cook any items you might have there. Artichokes may seem like a daunting vegetable to make, but if you use a rice cooker you will have the process down in no time.

Hold an artichoke by its stem and lay it on its side. Use a sharp knife to cut off the top third of the artichoke. Trim any dirty or blemished leaves away with scissors.

Cut a lemon in half and remove the seeds with a fork. Rub the lemon all over the artichoke while squeezing gently to release the lemon juice. Lemon juice will keep your artichoke from oxidizing and changing color.

Lay the artichokes into the steamer basket of your rice cooker. Pour 1/2 cup of water into the rice cooker for every artichoke. Place the steamer basket back on top and cover with a lid.

Turn the rice cooker on and steam for 20 minutes or until tender. Allow to cool for 10 minutes before you eat it.
