How to Boil Down Strawberries (5 Steps)
It might seem like drizzled strawberry sauce is a technique exclusive to gourmet chefs and five-star restaurants, but you can achieve the sweet and tart topper in your own kitchen without such credentials. Boiling down strawberries brings the juice out of the strawberry, which combines with your desired flavorings to create a sauce or syrup. You can use boiled-down strawberries to add a fresh taste to pancakes, waffles, pastries and cheesecakes or can create a strawberry vinaigrette or marinade.
Things You'll Need
- Colander
- Water
- Paper towels
- Knife or strawberry huller
- Bowl
- Potato masher or pastry blender
- Saucepan

Instructions
-
Place strawberries in a colander and rinse them with water to remove dirt. Drain the colander and pat the strawberries dry with a paper towel.
-
Cut off the stems of the strawberries, using a knife. Cut around and into the hull to remove the cores, using a knife or strawberry huller.
-
Pour the strawberries into a bowl. Mash the strawberries with a potato masher or pastry blender. Pour the mashed strawberries into a saucepan.
-
Add sugar and ingredients such as cinnamon, ginger, chili flakes, lemon juice or wine to flavor the mixture, if desired. Add water to help bring the mixture to a boil and cornstarch to thicken the mixture. Stir the mixture.
-
Bring the strawberry sauce to a boil over medium heat on the stovetop for about four minutes. Boil the strawberries for one minute and remove the pan from the heat. Drizzle over food as a warm sauce or chill the strawberry sauce in the refrigerator to serve it cold later.
