How to Mash Egg Yolks for Deviled Eggs (9 Steps)

Although the name implies otherwise, deviled eggs are nothing but heavenly when served up at a summer picnic or weekend potluck. Scoop out the yolks from hard-boiled eggs with a spoon and place them in a small bowl.

Mash the yolks with the back of a fork for quick deviled eggs. Press down firmly so the yolk is forced through the tines. Mash them until they're smooth.

Add condiments to the yolks. Choose traditional options, such as mayonnaise and mustard, or substitute avocado, hot sauces or relish. Mix the condiments into the yolk with a spoon, or continue to mash the yolk with a fork until the condiments are thoroughly incorporated and the mixture is smooth and creamy.

Put whole cooked yolks into the hopper of a garlic press or potato ricer for a more crumbly texture. Mash one yolk at a time in a garlic press, or several in a ricer.

Hold the press over a bowl and push the handle on the press so the yolks are forced through the holes. The yolks come out the size of rice grains.

Mix the condiments and additions into the riced yolks. Stir gently to combine, so you don't ruin the texture of the yolks.

Place cooked yolks, condiments and seasonings in the bowl of a food processor for creamy deviled eggs.

Process the mixture for about a minute, or until it is perfectly smooth and creamy. Use a spatula to scrape the sides of the bowl so all the ingredients are fully incorporated into the mashed yolks.
