How do you cook cauliflower curry?
Ingredients:
* 1 medium cauliflower, cut into florets
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 tablespoon grated fresh ginger
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 1/2 teaspoon turmeric powder
* 1/4 teaspoon cayenne pepper
* 1/2 cup plain yogurt
* 1/2 cup chicken or vegetable broth
* 1/4 cup chopped fresh cilantro
Instructions:
1. Heat a large pot or Dutch oven over medium heat. Add the cauliflower florets and onion and cook, stirring occasionally, until the onion is softened and the cauliflower is lightly browned, about 10 minutes.
2. Add the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper and cook, stirring constantly, for 1 minute.
3. Add the yogurt, chicken or vegetable broth, and cauliflower florets. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the cauliflower is tender.
4. Stir in the cilantro and serve immediately.
Tips:
* If you don't have a Dutch oven, you can also use a large pot or skillet.
* To make a vegan version of this dish, simply omit the yogurt.
* If you like your curry spicier, add more cayenne pepper or red pepper flakes.
* Serve with rice, quinoa, or naan bread.
