What causes dough to rise?
Yeast. Yeast is a fungus that feeds on sugar and produces carbon dioxide gas as a byproduct. When yeast is added to dough, it eats the sugar in the flour and produces carbon dioxide gas. This gas bubbles up and causes the dough to rise.
