Can you make tea cakes without baking powder or soda?
Ingredients
- 1 cup all-purpose flour (125g)
- 1/4 cup granulated sugar (50g)
- 1/2 teaspoon baking powder (2.5g)
- 1/4 teaspoon salt (1.25g)
- 1/2 cup (1 stick) unsalted butter, softened (113g)
- 1 large egg
- 1 teaspoon vanilla extract (5ml)
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, cream together the butter, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
- Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing the cookies about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies are lightly golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
