Ingredients

* 1 (8-10 pound) boneless pork butt, skin on

* 2 tablespoons brown sugar

* 2 tablespoons dry mustard

* 2 tablespoons ground black pepper

* 1 teaspoon salt

* 1/4 cup honey

* 2 cups all-purpose flour

* 1 cup cold butter, cut into small pieces

* 1/2 cup milk

* 1 egg yolk

Instructions

1. Preheat the oven to 325 degrees F (165 degrees C).

2. In a large bowl, combine the brown sugar, dry mustard, black pepper, and salt. Rub the mixture all over the pork butt.

3. Place the pork butt in a roasting pan and add the honey. Cover the pan and roast in the preheated oven for 4-5 hours, or until the pork butt is cooked through and the internal temperature reaches 160 degrees F (70 degrees C).

4. While the pork butt is roasting, make the huff crust. In a large bowl, combine the flour and butter. Use your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

5. Add the milk and egg yolk to the bowl and mix until the dough just comes together. Do not overmix.

6. Turn the dough out onto a lightly floured surface and roll it out to a 12-inch circle.

7. Transfer the dough to a 9-inch pie plate and trim the edges.

10. Place the shredded pork butt in the pie plate and top it with the huff crust.

* If you don't have a pie plate, you can use a 9-inch round baking dish.
