## Ingredients for Classic Indian Curry

Spices

Instructions

1. Prep: Chop veggies and set spices ready.

2. Temper Spices: Heat oil in a large pot/pan, Add cumin, coriander seeds and fennel seeds. Fry till they sizzle and pop, Add bay leaves, cinnamon stick, cardamom, and cloves. Sauté for a few seconds.

3. Add Ginger, Garlic: Add the sliced ginger and minced garlic. Sauté until fragrant.

4. Onion: Add the chopped onions, salt and cook till golden.

5. Add Veggies: Add the vegetables, one at a time, starting with bell peppers, carrots, potatoes. Cook until slightly softened.

6. Spice Powder: In a separate bowl, mix together cayenne, turmeric, cumin, coriander, and garam masala. Add this mixture to the pan and stir until fragrant.

7. Add Tomatoes: Finally add the canned tomatoes, and a cup of water. Bring it to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

8. Cook Rice: While the curry cooks, prepare the basmati rice according to the package instructions.

9. Serve: Serve the steaming hot curry with the cooked basmati rice and other side dishes if preferred.

- Optional: You can add cooked meat or paneer (Indian cottage cheese) to the curry for a non-vegetarian version.
