What are the three degrees to which a roux sauce can be cooked?
The three degrees of roux are:
1. __White Roux__ - cooked for approximately 1-3 minutes. It has a light golden or blond color and a floury, nutty flavor.
2. __Blond Roux__ - cooked for approximately 3-5 minutes. It has a pale golden color and a slight nutty flavor.
3. __Brown Roux__ - cooked for approximately 5-10 minutes. It has a dark brown color and a strong, nutty flavor.
