Ingredients:

For the Chili Paste:

* 5 pounds red jalapeño peppers, cleaned and cut into 1-inch pieces

* 1 cup white vinegar

* 2 tablespoons salt

For the Sriracha Sauce:

* 1 cup sugar

* 2 garlic cloves, minced

* 1 teaspoon kosher salt

* 1/4 cup water

* 2 tablespoons cornstarch

* 1/4 cup rice vinegar

* 1/4 cup fish sauce

* 2 tablespoons xanthan gum

Instructions:

1. To make the chili paste, combine the jalapeños, vinegar, and salt in a large pot. Bring to a boil over medium-high heat, then reduce heat and simmer for 30 minutes, or until the peppers are soft.

2. Remove from heat and let cool slightly. Carefully transfer the chili paste to a blender or food processor and puree until smooth.

3. Strain the chili paste through a fine-mesh sieve into a clean bowl or container. Discard the solids.

4. To make the Sriracha sauce, combine the sugar, garlic, salt, and water in a medium saucepan. Bring to a boil over medium-high heat, then reduce heat and simmer for 5 minutes, or until the sugar has dissolved and the mixture has thickened slightly.
